vegan birthday cake for scott

scott's birthday was on saturday the 13th, so i made him a birthday cake!



i took the basic chocolate cupcake recipe from Vegan Cupcakes Take Over the World, but put it in a square brownie/cake pan. when it cooled i cut it in half to make a double layer rectangular cake. i used the peanut butter buttercream recipe also from VCTOTW, which i was a little disappointed with. i don't know if it was the peanut butter or just the recipe, but it came out super thick, and the oil in the peanut butter kept separating from the icing. even though i sifted the powdered sugar twice, it still got all lumpy, creating the illusion of "cat food" as kyle said. looks aside, it was the perfect filler frosting, as it absorbed into the cake, giving a lovely peanut flavor. i covered the outside of the cake with the chocolate buttercream frosting from VCTOTW, which scott said was too sweet, but i thought it was pretty delicious.
